Klein’s Rapeseed Mayonnaise

Does anyone understands rap is Joaandim Klein at Klein’s Food. With his flair for flavor and ingredients, he makes the most of rapeseed’s versatility. Try Joaandim’s recipe for canola mayonnaise, perfect side dish for a grilled cut of meat.

INGREDIENTS

3.5 dl cold-pressed canola oil
1.5 dl regular canola oil
1 tablespoon Dijon mustard
0.5 dl egg yolk
About 0.5 tbsp apple cider vinegar
Salt and pepper

HOW TO DO IT:

  1. Whisk the egg yolk, mustard, and vinegar in a blender until the mixture is slightly fluffy.
  2. Then carefully add the oil while whisking constantly. Start by adding a little at a time. You can then increase the amount once you see that it’s “saturated.” Make sure the oil you’re adding is fully incorporated into the mayonnaise before adding more oil. Otherwise, it may curdle.
  3. Then season with salt and pepper. You can adjust the amounts of oil. Cold-pressed canola oil is quite potent and has a strong flavor.

Of course, you can also adjust the seasoning by adding more vinegar or lemon juice if needed.
