What is an egg cake?

Egg cake, or as they say in the Skåne dialect, “äggakaga,” is a beloved Skåne home-cooking classic. It can be compared to an oven-baked pancake or a kolbulle, but has its own unique character with a golden-brown exterior, a creamy center, and crispy-fried pork. It’s traditionally served with freshly stirred lingonberries—a taste experience that, for many, is synonymous with a Scanian summer.

No one knows exactly who created the first egg cake, but one theory is that it originated as a filling and practical dish for farmers during long workdays. It could easily be taken along and eaten out in the fields. The egg cake is believed to be a variation of the oven pancake, which has been made in Sweden since the 16th century. The main difference is the large amount of eggs, which gives the egg cake its distinctive character. As eggs became more affordable during the 20th century, the dish went from being a festive treat to a beloved everyday classic.

This dish has been passed down through generations and is an integral part of Skåne’s culinary heritage. In Trelleborg, the tradition lives on. Here, you can enjoy freshly baked äggakaka, make it yourself using a classic recipe, and even experience the World Championship in Äggakaka —a tribute to one of Skåne’s most iconic dishes.

Recipe for a Classic Scanian Egg Cake
